Looking for a great healthy dinner idea for tonight? Try these simple Caprese Lasagna roll ups. These are simply amazing and don’t cost much to make! I found this recipe originally on Cooking Classy but changed it up a little to make it easier.
Here is what you need:
8 lasagna noodles, uncooked
8oz freshly shredded, low-moisture part skim Mozzarella cheese (one bag)
3/4 cup Ricotta cheese
1 large egg white
1/3 cup freshly, finely shredded Parmesan cheese (about 1 1/4 oz)
3/4 cup Italian blend cheese, divided
freshly ground black pepper
3 – 4 medium Roma tomatoes, thinly sliced (about 1/6 inch thick slices)
1/4 cup chopped fresh basil, plus more for garnish
1 1/2 cup marinara or spaghetti sauce
First preheat the oven to 350 degrees. Cook the lasagna noodles according to the package. I use a big pot so the lasagna noodles fit without tearing. The noodles took a little over 10 minutes.
While the noodles are cooking prepare your filling. Start by whisking the Ricotta cheese and egg white together. Then add the Mozzarella, Parmesan and 1/2 cup of the Italian blend cheese, and a dash of pepper.
After about 10 minutes drain the lasagna noodles and place them nicely on wax paper and evenly place about 1/4 cup of the cheese mixture on each noodle.
Add 4 sliced Roma tomatoes to each lasagna noodle and then garnish with chopped fresh basil.
Add about 1 cup of marinara sauce to a 8X8 pan and then roll up the noodles and place seem down into the pan.
Lightly spread marinara sauce on the top of the noddles so that the noodles won’t dry out. Top with left over Italian blend cheese and garnish with leftover fresh basil.
Put the lasagna in the oven for 30 minutes and in just under 45 minutes you have a wonderful meal. If you want I would suggest you combine it with a Caesars salad and bread sticks.
